Recipe - The Pocket Burrito

Ingredients

  • 3 Pounds 95% Lean Ground Turkey
  • 1 onion
  • 1 bell pepper
  • 1 can adobo
  • 12 Mission Carb Ballance Tortillas
  • 1 can beans
  • 2 cups cooked rice
  • Your favorite hot sauce for burritos.

Instructions

  1. Cook enough white rice to make 2 cups of cooked rice.
  2. Dice Bell Pepper and Onion. Add these to a lightly oiled nonstick skillet on medium heat. Season with salt and garlic, remove from heat when they have begun to develop color.
  3. Drain and rinse beans.
  4. Add beans to a medium sized lightly oiled sauce pan. Lightly salt, and add garlic. Cook medium low, stiring occationally.
  5. Cook 3 pounds of Turkey on medium heat in a big nonstick skillet until it is about 90% cooked, almost no pink left.
  6. Drain turkey of all liquid and return to skillet.
  7. Add adobo and mix very well.
  8. Add 1 TSP of salt, and 1 TBSP Garlic powder, Paprika, Cumin to Turkey.
  9. Add bell pepper and onion Mix to Turkey.
  10. Cover and finish cooking the turkey on low heat for about 15 minutes. You should hear the turkey still lightly sizzling.
  11. Add Beans and Rice to turkey, mix well.
  12. Divide turkey mixture amongst 12 tortillas.
