Recipe - Spicy Green Sauce

Ingredients

  • 3 heads Cilantro roughly chopped.
  • 1 TBS Garlic, minced.
  • 1 Large Onion, medium diced.
  • 6 large Jalapeno roughly chopped.
  • 0.25 cups oil.
  • 4 TBS light Mayo.

Instructions

  1. Cook onion with small amount of oil on medium heat so it develops rich color.
  2. When onion is almost done, add garlic. Make sure raw garlic flavor gets cooked out.
  3. Roughly Chop Cilantro and Jalapeno for blender.
  4. Add Cilantro, Jalapeno, cooked onion and garlic to blender. You will probably need to add a little, then blend, then add more, and repeat.
  5. Add 0.25 cups oil and 4 TBS light mayo to the blender during the above process. Don’t do it all at once, adding liquid to the top of the blender will help everything blend down.
  6. Add water to aid the blending. Add as little water as possible. 0.25 cups is enough for me. Spicy Green sauce should be liquid but with texture.
  7. Add salt to taste, using blender to mix in salt.
  8. Refrigerate before serving.
