How to Cook a Steak

- Season Steak generously with salt and pepper. Make sure to also get the sides. Use large grain salt if possible. Pat the salt and pepper into the steak with your hand
- Let seasoned raw steak sit out for 10 to 20 minutes to warm up to room temperature and let the salt & pepper do their thing
- Add oil to cast iron and get it very hot
- add steak, rolling it away from you so you don’t die from the oil splattering. Do not move the steak after you have put it down, you will rub the spices away.
- Cook the steak 4 minutes on the top and bottom. Sear the two longest sides for 4 minutes each as well, if possible (a bone on one side for example makes this impossible) If you have a thinner cut of meat, do less time. Make sure the bottom of the pan always has oil in it.
- After the top, bottom, and 2 longest sides have been seared, turn off heat. Add butter and garlic to top of steak and pan.
- Baste the steak in the garlic butter every 2 minutes or so while it sits in the hot pan.
