Recipe - Creamed Spinach
Ingredients
Makes 4 Servings
3 to 4 bunches
(2½ pounds
or40 ounces
)spinach
, trimmed and cleaned.2 tablespoons
butter
.1 Yellow Onion
, minced.6 garlic cloves
, minced.4 ounces
of a brick ofcream cheese
, cut into pieces.½ cup
whole milk
. (Can use half and half for Keto)1 pinch
groundnutmeg

salt
and groundpepper
Instructions

Boil one huge pot of salted water. Add
spinach
and cook until wilted, about one minute. May need to do this in batches as to not overflow the pot. -
Drain
spinach
, rinse with tap water until cool sospinach
is safe to touch. Use hands or salad spinner to remove as much water as possible. -
Coarsely chop
spinach
and set aside. -
In deep saucepan, heat
butter
over medium. Addonion
andgarlic
; season withsalt
andpepper
. Cook at least 5 minutes, potentially much longer if your guests are weenies and don’t like sharponion
. If you are cooking it longer, consider chopping theonion
into larger pieces as mincedonion
cooked for a long time will just turn into soup and we want theonion
to give us texture. -
Take saucepan off of heat and let cool to the point that
milk
wont curdle when added to saucepan. Add chopped upcream cheese
andmilk
, return saucepan to low heat and occasionally stir untilcream cheese
has melted and incorporated into everything else. -
Season with pinch of
nutmeg
, moresalt
andpepper
to taste, and serve.
