Recipe - Creamed Spinach
Ingredients
Makes 4 Servings
3 to 4 bunches(2½ poundsor40 ounces)spinach, trimmed and cleaned.2 tablespoonsbutter.1 Yellow Onion, minced.6 garlic cloves, minced.4 ouncesof a brick ofcream cheese, cut into pieces.½ cupwhole milk. (Can use half and half for Keto)1 pinchgroundnutmeg- coarse
saltand groundpepper
Instructions

Boil one huge pot of salted water. Add
spinachand cook until wilted, about one minute. May need to do this in batches as to not overflow the pot. -
Drain
spinach, rinse with tap water until cool sospinachis safe to touch. Use hands or salad spinner to remove as much water as possible. -
Coarsely chop
spinachand set aside. -
In deep saucepan, heat
butterover medium. Addonionandgarlic; season withsaltandpepper. Cook at least 5 minutes, potentially much longer if your guests are weenies and don’t like sharponion. If you are cooking it longer, consider chopping theonioninto larger pieces as mincedonioncooked for a long time will just turn into soup and we want theonionto give us texture. -
Take saucepan off of heat and let cool to the point that
milkwont curdle when added to saucepan. Add chopped upcream cheeseandmilk, return saucepan to low heat and occasionally stir untilcream cheesehas melted and incorporated into everything else. -
Season with pinch of
nutmeg, moresaltandpepperto taste, and serve.
