Recipe - Creamed Spinach

Ingredients

Makes 4 Servings

  • 3 to 4 bunches (2½ pounds or 40 ounces) spinach, trimmed and cleaned.
  • 2 tablespoons butter.
  • 1 Yellow Onion, minced.
  • 6 garlic cloves, minced.
  • 4 ounces of a brick of cream cheese, cut into pieces.
  • ½ cup whole milk. (Can use half and half for Keto)
  • 1 pinch ground nutmeg
  • coarse salt and ground pepper

Instructions

  1. Boil one huge pot of salted water. Add spinach and cook until wilted, about one minute. May need to do this in batches as to not overflow the pot.

  2. Drain spinach, rinse with tap water until cool so spinach is safe to touch. Use hands or salad spinner to remove as much water as possible.

  3. Coarsely chop spinach and set aside.

  4. In deep saucepan, heat butter over medium. Add onion and garlic; season with salt and pepper. Cook at least 5 minutes, potentially much longer if your guests are weenies and don’t like sharp onion. If you are cooking it longer, consider chopping the onion into larger pieces as minced onion cooked for a long time will just turn into soup and we want the onion to give us texture.

  5. Take saucepan off of heat and let cool to the point that milk wont curdle when added to saucepan. Add chopped up cream cheese and milk, return saucepan to low heat and occasionally stir until cream cheese has melted and incorporated into everything else.

  6. Season with pinch of nutmeg, more salt and pepper to taste, and serve.
